Ja Ja’s Carrot Cake

This is Jackie Elder’s famous carrot cake.  The original recipe came from the Amherst Garden Club in the 1950s.  She has since changed it up some and it is so delicious it is our family’s go to birthday cake.

CARROT CAKE

Ingredients

2 cups of flour
2 tsp of cinnamon
1 1/2 cups of oil
pinch of salt
2 cups of sugar
2 tsp baking soda
4 eggs
3 cups grated carrots
1 8oz can of crushed pineapple

Directions

•  Preheat oven to 350 degrees.

•  Combine all of the ingredients except the carrots in a mixing bowl and beat with an electric mixer for 4 minutes.

•  Add the carrots and mix by hand.

•  Bake in a well greased, floured pan for one hour.

• Cool for 15 minutes in pan on rack and then invert onto rack.

FROSTING                                                                                                                                                  

Ingredients

1 stick of butter
3/4 box of confectioner’s sugar
1 1/4 tsp of vanilla
8 ounces of cream cheese
1/2 tsp lemon juice
1 package of sliced almonds

Directions

•  Beat together until creamy.

• Spread on cake.

•  Add sliced almonds to taste on top of and around cake.
